This is the recipe which has saved me every time I have guest who arrive at a short notice, or when my dormant sweet tooth wakes up and needs a sweet delight to indulge ASAP. Believe me you can get these babies ready in matter of minutes and pretend you slogged away in the kitchen for hours.
I made these Walnut Choco Chip Cookies for a couple of my girlfriends who came last weekend
to my place and they were devoured in seconds.
(With promises to hit the gym right after)
But seriously, if you get this recipe under your belt you
will never want a store bought cookie again.
So let’s get started...
To make these
Chocolate chips and walnut cookies you will need :-
Ingredients:
- Unsalted Butter – 1 cup
- Granulated White Sugar -3 and 1/4th cup
- Brown Sugar – 3 and 1/4th cup
- Pure Vanilla Extract – 1 and 1/2 tsp
- Eggs – 2 Large
- All Purpose Flour (Maida) – 2 and 1/4th cup
- Baking Soda- 1 tsp
- Salt – ½ tsp
- Choco chips – 1 cup
- Chopped Walnuts – 1 cup
Steps:
1. Preheat the oven to 375 degree F(190 degree
Celsius). Take two baking sheets and
cover them with wax paper or you can even butter your tray .
2. Now take 1 cup (226 gm ) of unsalted butter. Normally for cookies you need butter at room
temperature but if you are anything like me, and you have guest coming very
soon you can take the butter right out of refrigerator and heat it in microwave
for just 15 seconds. All we want to do
is remove the chill. We do not want to melt the butter. This way you won’t have
to refrigerate the batter later.
3. Now beat the butter till it’s creamy and smooth. You can use a stand mixer or hand mixer or even mix it with a whisk by hand. (I have whisked the butter by hand here)
4. Now add to this 3 and ¼ cup (150 gm) of granulated white sugar and 3 and 1/4th cup (160 gm) of brown sugar.
5. Add 1 and ½ tsp of pure vanilla extract. (Try to use pure vanilla extract as it gives better flavor than imitation ones)
6. Now beat it till all the ingredients are mixed. You do not have to mix it for a long time like you do for cake as we do not need a lot of air to be incorporated in the cookie dough.
8. Now in a separate bowl we will prepare the dry ingredients. Take 2 and ¼ cup (295 gm) of all purpose flour. Add 1 tsp of baking soda and ½ tsp of salt. Always mix the dry ingredients in a separate bowl so that there are no clumps of baking soda in the batter otherwise the cookie will be bitter if you bite into baking soda.
11. Now using a scoop or two spoons, scoop out the batter and place them on the wax paper on the baking trays. Make sure that you leave enough space between the cookies’ scoops as the cookies will spread and expand when baked. So you need to leave enough space for them to spread and not stick to each other.
12. Now bake these cookies in your oven for 10-15 minutes depending upon your oven as well as whether you want them chewy or crisp. I feel at 12 minutes my cookies turn out to be the perfect balance of chewy gooey and crisp.

4. Now add to this 3 and ¼ cup (150 gm) of granulated white sugar and 3 and 1/4th cup (160 gm) of brown sugar.
5. Add 1 and ½ tsp of pure vanilla extract. (Try to use pure vanilla extract as it gives better flavor than imitation ones)
6. Now beat it till all the ingredients are mixed. You do not have to mix it for a long time like you do for cake as we do not need a lot of air to be incorporated in the cookie dough.
7. Now add 2 large eggs to the mixture one at a time. Add
one egg and mix it and then add the second egg.
8. Now in a separate bowl we will prepare the dry ingredients. Take 2 and ¼ cup (295 gm) of all purpose flour. Add 1 tsp of baking soda and ½ tsp of salt. Always mix the dry ingredients in a separate bowl so that there are no clumps of baking soda in the batter otherwise the cookie will be bitter if you bite into baking soda.
9. Now gradually add this flour mixture to the butter
mixture you have already prepared and mix everything together.
10. Halfway through the mixing add about 1 cup of chocolate
chips and same amount of coarsely cut walnuts. You can increase or decrease the
proportion of walnuts and chocolate chips as per your liking or preference.
11. Now using a scoop or two spoons, scoop out the batter and place them on the wax paper on the baking trays. Make sure that you leave enough space between the cookies’ scoops as the cookies will spread and expand when baked. So you need to leave enough space for them to spread and not stick to each other.
12. Now bake these cookies in your oven for 10-15 minutes depending upon your oven as well as whether you want them chewy or crisp. I feel at 12 minutes my cookies turn out to be the perfect balance of chewy gooey and crisp.
Cool these cookies for sometime on the rack and then these
cookies can be stored for several days in an airtight container.
